Sydney Cafe is celebrating truffle season

Three Williams café in Redfern in Sydney is celebrating everything truffle by serving a seven-dish truffle menu.

There’s no need to forage for Sydney’s best truffle dishes this year with Three Williams café in Redfern once again presenting one of the city’s most innovative truffle menus for the 2019 season. The seven-dish menu will be available from the start of truffle season (estimated to be early June) and will sit alongside the daily café menu for the duration. 

The 2019 ‘Celebrating Truffles’ offering includes new dishes as well as favourites from the previous two years. From the warm and comforting flavours of the mac and cheese croissant and the classic combination of earthy mushrooms, salty feta, creamy scrambled eggs and truffle to the sweet and savoury balance of the truffle French toast, Head Chef Jacqui Ektoros’ (formerly of Devon Café, Guillaume at Bennelong) truffle menu gives you every excuse you need to brunch this winter. 

Perennial favourite roasted Peking duck pasta with ginger-infused cream and fresh truffle is back for its third year on the menu, along with last year’s newcomer, the gooey three-cheese waffle fries topped with fresh truffle and chives. Making its debut in 2019 is the almighty mac and cheese croissant stuffed with a truffle mac and cheese croquette, jamon, napoletana sauce and topped with a poached egg and shaved truffle, as well as crunchy brioche French toast with house-made truffle ice-cream, chocolate brownie, caramel cookie cream, popping candy, truffle anglaise, fresh raspberries and shaved truffle. 

Ektoros has been the force behind the truffle menu for the last three years and has spent months planning and testing the 2019 dishes. One of Ektoros’ highlights from this year’s menu is a dish that showcases the 2018 world’s best pork sausage. 

The 2019 truffle menu will utilise fresh truffles from The Truffle & Wine. Co. in Manjimup, Western Australia. It will sit alongside the existing Three Williams café menu and will be available all day, seven days a week, throughout the season.
