A transformative New World where tea meets gin revealed for The Star Sydney.

Tea house by day, gin bar by night; The Star Sydney has lifted the lid on its newest addition, G&Tea, a stylishly quirky new bar on the ground floor of the Astral Hotel which opened last month.

With a menu celebrating a range of artisan tea and gin in all its refreshingly delicious glory, G&Tea’s chameleon-esque vibe sees both its offering and mood transform from day into night. 

Guests can immerse themselves in daytime rainforest tranquillity with 24-karat gold speciality white tea, while the magic of moonlight and fireflies creates an atmospheric companion to an evening gin martini.

$120 a pot

At $120 a pot, the Yellow Gold Tea Buds by TWG is the most expensive and most prized of the white tea realm. Its platinum-coloured buds are transformed into ambrosial jewels plated with 24-karat gold creating a swirling and sparkling infusion with honeyed overtones. 

By night, the immersive screens light up with fireflies and guests can indulge in a sensory journey of gin incorporating from the timeless Gin & Tonic and Gin Martini classics alongside new fusions such as the Gin Spritz with Ink Gin, Prosecco, Soda and Orange Slice. 

Or for those who like to be spoiled for choice, the G&Tea mixologists have crafted a selection of Tea-Tails including the Green Tea Mojito with Green Tea, Tanqueray, Basil Seeds, Soda, Mint; the Tea Tini with Jing Green Apple Hibiscus Tea, Ink Gin, Vermouth, Lemon Peel and the Passionfruit Green Tea Whiskey. 

Gourmet sandwiches

Guests can further whet their appetite with offerings such as gourmet sandwiches like the Smoked Ham Hock Rillette with Gruyère de Comté, Tea Poached Egg and Ciabatta and the Gin Cured Tasmanian Ocean Trout with Shaved Fennel, Chives, Finger Lime Caviar and Yuzu Emulsion. While the Chef’s signature dish is a twist on the smashed avocado classic, with Sydney’s own prized La Stella burrata cheese, chunks of mashed avocado, spring onion, red chilli, toasted sesame seeds, crushed cashew nuts, and black tea salt on local artisan sourdough. 

Located on the Ground Level at Astral Tower with a 74-seat capacity, G&Tea is open seven days a week, 6.30am – 11pm Sunday to Thursday and 6.30am – midnight Friday and Saturday
